The word madras in the name refers to the use of madras curry powder, a mixture of herbs and spices from southern India.
This recipe is for 4 persons and preperation time is 95 minutes.
Ingredients:
- 1 kg beef or chicken, diced¼ cup coriander powder
- 6 tsp cumin powder
- 1 tsp brown mustard seeds
- ½ tsp black peppercorns
- 1 tsp chili powder
- 1 tsp turmeric powder
- 1 tsp salt
- 2 tsp pressed garlic
- 2 tsp grated fresh ginger
- 3 tbsp white vinegar
- 1 tbsp oil
- 1 chopped onion
- 4 tbsp tomato puree
- 2½ dl beef broth
Preparation method:
- Put coriander, cumin, mustard seeds, peppercorns, chili, turmeric, salt, garlic and ginger in a bowl. Mix well together. Stir the mixture together with the vinegar to a smooth puree.
- Heat oil in a pan. Bake the onion until it is soft. Add the spice puree and heat while stirring for 1 minute.
- Add meat. Bake while stirring until the meat is covered. Add tomato puree and broth. Simmer covered, 60 minutes, until the meat is tender. Delicious with basmati rice or naan.
