Mango chutney

A chutney is a seasoning from Indian and Pakistani cuisine. Chutney is usually freshly prepared. Such a chutney contains no preservatives, because it is eaten immediately after preparation, but you can add preservatives to keep it longer, such as white wine vinegar.

Ingredients:

  • Number of unripe mangos
  • 4 cloves of garlic, pressed
  • Number of peppers (fresh), finely chopped
  • 1 onion, finely chopped
  • 1 tbsp Chutney massala
  • Salt
  • Oil

Note: The ingredients that state 'number' can be used to your own taste. The more mangos the sweeter and the more peppers, the hotter!

Preparation method:

  1. Peel and grate the mangos (this will go fairly quickly because the mangos are unripe).
  2. Heat the oil and fry the finely chopped onion, garlic, pepper and chutney massala. Add the grated mango and continue to stir until all the moisture has evaporated. Season with salt.
  3. Store in a pot where you then pour a layer of oil over the chutney until it is just below.

Note: Pepper on your hands can be removed with lemon, as well as garlic odor :P
